Will and I have been together for just over 4 years now. In that time, we’ve never been on a double-date with any of his siblings & their partners—crazy, right?
Okay, we only see 1 of his 4 siblings regularly & he’s also the only one who has a partner. Plus, these past 2 years were kind of a write-off, so I guess it’s not so hard to believe.
Last weekend, we finally went out together and tried a vegan restaurant: La Bartola! This was Will & my first meal out in about 4 months and it was so nice to be out for a change!
The highlight of the night was easily the mushroom tacos. If we hadn’t already had tostadas and a taco platter, I would’ve ordered more. But instead, we ended the night with their chocolate cake which came with a side of “popcorn mylk”, which is coconut milk with popcorn blended into it. Sounds strange, but surprisingly delicious!

Once the mayo was ready, I prepped this vegan caesar salad dressing.
At some point during the weekend, I realized we still hadn’t used the bok choy I purchased earlier in the week. As it so happens, I came across this recipe for drunken noodles by Seonkyoung Longest. (I still have some regular fish sauce in our kitchen, so this dish was not vegan.)
Will also reminded me of a bunch of mushrooms that were in our fridge. And because he loves, loves mushrooms, we made this one-pot mushroom pasta by Delicious Everyday. And yes, he was a big fan!
This weekend is looking pretty quiet for us, save a couple of personal appointments. But other than those, I hope you have a brilliant weekend!
